Default Dynamite Simple Summer Tomato Soup (from The New Vegetarian Cooking for Everyone)

Can't make one more batch of marinara or salsa with all of those summer garden tomatoes? Try this extraordinarily simple soup. It is delicious, and is basically tomatoes and onions and a dash of salt. Period. It is dynamite served warm, but can also be chilled and served as a gazpacho with some diced cucumbers/basil/dill/etc.:

3 TBS butter or olive oil
1 cup of diced shallots (I use red onion and a few cloves of garlic in lieu of shallots to avoid a grocery store run)
5 lbs garden tomatoes cut into big pieces
1 tsp sea salt
fresh ground pepper
(that's it!)

melt butter/oil in soup pot over low heat;
add shallots (or red onion & garlic) and cook while preparing 'maters;
add tomatoes to pot with salt and 1/2 cup of water;
Cover and cook for 45 minutes;
Give pot a stir occasionally as you pass thru kitchen for another glass of wine;
Blend with an immersion blender or whatever blender you've got;
Season with a bit more salt if needed and the pepper.
Serve however you like tomato soup (ideas: as is; add cream for a cream of tomato; swirl in a tablespoon of herbed butter or pesto; add some croutons; or served chilled with creme fraiche, diced avocado & lime or cucumbers)

Default Steel Magnolias and tomatoes

Ouiser Boudreaux could have used this tomato recipe it seems . . .

Ouiser - Somebody's gotta take em. I hate em. I try not to eat healthy food if I can possibly help it. The sooner my body gives out the better off I'll be... I can't get enough grease into my diet.

Anelle - Then why do you grow them?
Ouiser - Because I'm an old Southern woman and we're supposed to wear funny looking hats and ugly clothes and grow vegetables in the dirt. Don't ask me those questions. I don't know why, I don't make the rules!"
