Amanda Panda's Luckey Asian Lettuce Wraps

Healthy. Delicious. So Easy!

  • 1 1/4 lbs. Meat or Tofu
  • (Ground Chicken, Ground Turkey, or 2 pkgs.(16oz.) Smoked / Tai Flavored Tofu - Diced)
  • 1 tablespoon of minced ginger - more or less as desired
  • 2 teaspoons minced garlic - more or less as desired
  • 4 or 5 chopped green onions
  • 2 tablespoons of low sodium teriyaki or soy sauce - more or less to taste
  • 1/4 cup chicken or vegetable broth (for moisture if needed)
  • 1/4 cup chopped peanuts or almonds (optional)
  • Fresh bean sprouts - enough to top 12 wraps
  • 1 Head of lettuce leaves

Spray a large nonstick pan with cooking spray or a small amount of canola oil. Saute the ginger, garlic, soy sauce and green onion until onion just begins to soften. Remove from heat and set aside in a bowl.

Put ground meat into skillet, saute until cooked through, crumbling the meat with a spatula while cooking. Use broth for added moisture if desired. If you are using tofu, sauté until diced tofu is warmed. Once the meat/tofu is cooked, add the ginger, garlic and green onion mixture to the meat, mixing thoroughly. Also, add in the chopped nuts at this time if desired.

Separate leaves from one head of lettuce. Rinse the leaves in water and pat dry with a paper towel.
On a large serving platter arrange a pile of the lettuce leaves, a pile of bean sprouts, and the heated meat/tofu mixture on the side. To make the wraps, fill a lettuce leaf with the meat mixture, top with bean sprouts, and gently roll the leaf burrito style. Serve on red paper plates for fun and color and long with iced or hot green tea!

* For a Spicier meat/tofu mixture, add in a dash or two of red pepper or your favorite Asian spice to taste. We like Tai Spice by The Spice Hunter and Emeril's Asian Spice.

* Allow guests to add additional salt or pepper to their own individual taste.
