Recipes

Spiced Apricot Chicken

A tasty way to spice up chicken!

  • 4 Chicken Breasts, boneless and chicken breasts
  • 4 apricots, fresh if possible, split in half and pitted
  • 1 tbls. Cumin
  • 1 tsp. Turmeric
  • 1/4 tsp. Herbs de Provence
  • 1/2 cup Non-fat yogurt, plain, unsweetened
  • Zest of one Lemon

Preheat oven to 375 degrees
Carefully split the chicken breast with a small sharp knife
Place two apricot halves in each breast
Secure with toothpicks
In a small bowl whisk together the remaining ingredients
Place the chicken breasts in an oven-proof pan
Brush the yogurt mixture across the chicken
Bake for 35 minutes

Serves Four
