Spiced Apricot Chicken
A tasty way to spice up chicken!
- 4 Chicken Breasts, boneless and chicken breasts
- 4 apricots, fresh if possible, split in half and pitted
- 1 tbls. Cumin
- 1 tsp. Turmeric
- 1/4 tsp. Herbs de Provence
- 1/2 cup Non-fat yogurt, plain, unsweetened
- Zest of one Lemon
Preheat oven to 375 degrees
Carefully split the chicken breast with a small sharp knife
Place two apricot halves in each breast
Secure with toothpicks
In a small bowl whisk together the remaining ingredients
Place the chicken breasts in an oven-proof pan
Brush the yogurt mixture across the chicken
Bake for 35 minutes
Serves Four
