Spicy Beets

Beets are a colorful addition to any meal. They are also valuable sources of iron that is easily assimilated by the body. Beets also contain Vitamins A and C, magnesium, calcium, phosphorus, niacin, folic acid and fiber. Spicy Beets will provide all of the nutrients and will undoubtedly become a family favorite.

  • 2 cups Beets - cooked and grated
  • 1/4 cup Water
  • 1/3 cup Apple cider vinegar
  • 1 Tbs. Your favorite sugar substitute (I like Splenda in this)
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Cloves
  • 1/4 tsp. Salt
  • 1/4 tsp. Ginger - fresh grated

Mix all the ingredients in a medium covered pot.
Cook on medium until they begin to simmer.
Reduce heat and cook for 10 minutes.
