Green Beans with Crunch

Fresh green beans are available almost year round. This recipe adds a little pizzaz to the plain bean.

  • 4 cups Green Beans, fresh, cut in 2 inch pieces
  • 1/2 cup Mushrooms, sliced
  • 3 tbs Onion, minced
  • 1 clove Garlic, minced
  • 1 tbs Olive oil
  • 1/2 cup Water Chestnuts, sliced
  • 1/2 cup Almonds, sliced
  • 1/2 tsp Herbs de Provence
  • 1/4 tsp Ginger, ground
  • 1/4 cup Parmesan cheese, grated

Place the beans in a large saucepan and cover with water
Bring to a boil
Reduce heat and simmer until crispy tender

In a large skillet saute mushrooms, onions, garlic, almonds, chestnuts and seasonings in olive oil
Drain beans and add to skillet
Heat thoroughly
Sprinkle with the Parmesan cheese and serve warm
