Cooking in the Lite

Collard Greens

Rita and I agree... This is one of the most nutritious dishes you can make! It can even be a meal in itself.

  • 2 cups Collard greens, washed
  • 1/2 tsp. Grape seed oil
  • 1 Yellow onion, chopped
  • Water

Heat the grape seed oil in a pot
Add the onion to the pot
Trim and remove the thick stems from the greens
Chop the greens and add them to the pot
Add water to almost cover the greens
Cover and simmer for 30 to 45 minutes

Serve Warm. Excellent with fresh tomatoes
