Black Bean Salad Easy & Quick
Southwstern flavor with pizzaz!
- 3 cans (15 ounces each) black beans, rinsed and drained
- 4 tablespoons frozen corn
- 1-2 tablespoons chopped red onion
- 1 avocado, peeled, pitted and chopped
- 2 medium tomatoes, peeled and chopped
- 1 fresh jalapeno, seeded and chopped
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar (optional)
- 4 tablespoons fresh lime juice
- Salt/pepper to taste
- 1/4 to 1/2 cup fresh chopped cilantro
Combine and gently mix all ingredients in large salad bowl. Enjoy this feast to the eyes and palate alone or with other dishes. In my family, this dish is so appreciated, it stands on its own.
