Yin Yang Soup

A smooth taste of Spring! Created by Linda Levy & Francine Grabowski, RD, CRD, from The Best Diet on Earth

  • 1 medium cantaloupe, rind & seeds removed, cut up
  • 1 medium honeydew melon, ditto
  • 1 red bell pepper, seeded and diced
  • 2 tbs fresh basil, finely chopped
  • Juice of one lime
  • 2 tbs fresh mint, finely chopped

Puree each melon separately
Pour each puree into a pitcher
Refrigerate
When ready to serve, stir the soups and pour them exactly at the same time into chilled soup plates
Garnish cantaloupe puree with red pepper and basil
Garnish honeydew puree with lime juice and mint

Pouring the purees simultaneously really does create a yin yang symbol in your bowl!
