Sweet Potato Soup

This is so sweet, everyone will love it, and it's so easy that you'll love it. It's filled with beta-carotene! Serves 6.

  • 1 T vegetable oil
  • 1 small onion, chopped
  • 6 cups reduced sodium chicken stock
  • 2 large sweet potatoes, peeled and chopped
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground pepper

In a large sauce pan, warm oil over medium-high heat. Add onions and saute for 2 to 3 minutes or until onions are soft and translucent. Add chicken stock, sweet potatoes, nutmeg and pepper. Cover and bring to a boil; reduce heat and simmer for 25 minutes or until potatoes are tender.

Removes soup from heat, and in batches, puree soup in a blender or food processor until smooth. Return soup to saucepan and heat throughly.

Garnish soup with dollop of non-fat sour cream or yogurt.
