Salmon Spread

Salmon is a rich source of Omega 3 nutrients, have no carbohydrates and are an excellent source of protein. If you are incorporating more B vitamins in your diet, salmon is an ideal food. If you are able to, it is always best to purchase fresh salmon, even if it is flown in from the Pacific Northwest. (Surprisingly, it isn’t as expensive as one might think.) The flavor is unbeatable and the nutrients are always best when fresh.

  • 1 cup Cold cooked and boned Pacific Salmon
  • 1 tsp. Dijon mustard
  • 2 tbs. Non-fat mayonnaise (I like the soy mayonnaise)
  • 2 tbs. Fresh orange juice
  • 1 tbs. Zest of orange
  • 1/2 tsp. Crushed garlic
  • 1 tbs. Rosemary - chopped very fine if fresh
  • Capers

Place all ingredients in the blender.
Pulse until ingredients begin to mix together, then liquify about one minute.
Remove from blender and place in decorative bowl.
Serve on light rye Wassa crackers or stuffed in celery
Top with capers
Serve cold.
