Recipes

Spinach & Artichoke Dip

This is an easy dip for veggies or whole grain chips and perfect for parties during warmer summer evenings.

  • 2 lbs cleaned fresh spinach
  • 12 oz artichoke hearts
  • 1 tbs extra virgin olive oil
  • 2 cups low far mozzarella cheese
  • 1 cup fresh shredded Parmesan cheese
  • 1 cup shredded provolone cheese
  • 1 cup low fat sour cream
  • 2 tbs fresh dill
  • 2 tbs fresh thyme
  • Salt and fresh ground pepper to taste

Cook the spinach thoroughly and drain off any excess liquid.
Place all ingredients in a blender or food processor and blend on liquify.
The heat from the cooked spinach will melt the cheeses.
Immediately place the mixture in a warming dish and watch your guests enjoy.
