Quinoa Fruit Torte

Perfect for breakfast, snacks and also makes a great desert... and it is easy!

  • 1 cup sliced fruit *
  • 1 3/4 cups milk
  • 4 eggs or 8 egg whites
  • 1 cup quinoa flour
  • 1/4 Splenda or sugar substitute
  • 1 tbsp maple syrup
  • * Try any of the following, alone or in combination with each other:
  • apples, peaches, mango, cherries, blueberries, plums, star fruit, pears.

Preheat oven to 350 degrees
Spray a 9 inch pie pan with Pam
Arrange sliced fruits in the bottom of the pie pan
Place all other ingredients in the blender and liquify to a smooth batter
Pour the batter over the fruit
Bake for 35 to 40 minutes

Brit’s Note: Quinoa is the only complete protein grain and supplies all the essential amino acids in a balanced pattern. It is easy to digest and contains no gluten.
