Recipes

*Quinoa Applesauce Cake

This is one of the tastiest (and healthiest) vegan cake recipes I have made. Hat’s off to Veganfusion and the Blossoming Lotus Restaurants.

  • Dry Ingredients
  • 1 3/4 cup quinoa flour
  • 1 cup currants or other dried fruit
  • 1/2 cup chopped pecans or macnuts
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp ground clove
  • Wet Ingredients
  • 1/2 cup safflower oil
  • 1 cup sucanat
  • 2 cups unsweetened applesauce

1. preheat oven to 350
2. mix together dry in large mixing bowl
3. mix together wet in small mixing bowl
4. add wet to dry. combine well
5. spoon batter into 8x8 inch baking pan and bake for 40-45 minutes or until toothpick comes out clean.
