Fresh Basil Pesto
Healthy and satisfying!
An aromatic culinary favorite. For centuries basil has been used to help alleviate depression, as an antiseptic, and as a topical soother for the skin., but my favorite use is in sauces!
- 2 cups fresh basil leaves
- 1/4 - 1/2 cup parmesan cheese grated
- 1/4 - romano cheese grated
- 3 cloves of fresh garlic
- 1/2 cup pinenuts or sliced almonds
- A dash of green tobasco
- 1/4 - 1/2 cup olive oil
Add basil leaves, parmesan and garlic in a blender or food processor.
Scrap the sides often to grind all the leaves and garlic.
Slowly add the olive oil until a desired consistency is reached.
I serve this over brown rice or quinoa pasta, but it's also great over steamed veggies, wild rice, grilled chicken breasts...
