Cooking in the Lite

This salad is a meal in itself, but is excellent served with Garden Fresh Gazpacho Soup

• Salad
• 2 cups Romaine lettuce, torn
• 2 oranges, peeled, thinly sliced, quartered
• 1 apple, diced
• 2 red onions, thinly sliced
• 1 cup jicama, peeled and julienne-sliced
• Dressing
• 1/3 cup orange juice
• 1/2 tsp extra virgin olive oil
• 1 tsp dried dill
• 1/2 tsp chili powder
• 2 drops green Tabasco

Toss all salad ingredients in a large bowl
In a small bowl whisk together the dressing ingredients
Pour dressing onto salad and enjoy
