Italian Chicken
This is a nutritious easy meal that will satisfy the hungriest appetites.
- 2 whole skinless, boneless chicken breasts
- 1 tsp olive oil
- 4 cloves garlic, minced
- 1 tsp fresh rosemary, finely chopped
- 1 tsp lemon pepper
- 1 cups chicken broth
- 1/4 cup sliced mushrooms
- 1/4 cup sun dried tomatoes
- 1/4 cup pitted, chopped Kalamata olives
- a pinch of crushed red pepper flakes
Rinse the chicken breasts
Place olive oil in oven proof baking dish
Place chicken in baking dish
Bake for 10 minutes at 350 degrees
Turn the chicken and add the remaining ingredients
Cook for 10 minutes more.
Remove chicken and slice in long strips
Place the broth mixture in a skillet and bring to a boil
Stir and allow it to simmer for 10 to 15 minutes
Remove from heat.
Serve chicken on a bed of brown rice
Spoon the broth mixture over the chicken
It’s a perfect meal when served with a veggie filled salad
