Kid Tested Stuffed Cabbage Rolls
These healthy rolls almost sound like dessert, but they aren’t. These delicious rolls make an excellent main corse, are packed with nutrition, and kids love to make them almost as much as they enjoy eating them!
- Two heads of green cabbage, washed
- (Use only the large leafs)
- 1 cup cooked brown rice
- 1 cup raisins
- 2 tomatoes, diced
- 2 tbs natural maple syrup
- 1/2 cup walnuts, chopped
- 1/2 cup almonds sliced
- 1 small brown onion, finely diced
- 1/2 cup orange juice
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- omit nuts if you are allergic to them
- try adding apples instead
Boil a large pot of water (save the water for use later in this recipe. It is also good stock for soups.)
Core the cabbage and drop it in the boiling water
Remove from heat and allow to stand for 15 minutes
Remove cabbage, separate leafs and drain thoroughly
(you will be using only the large leafs so save the others for some Very Vegan Veggie Stew.
In a large bowl combine all other ingredients
Lay a large cabbage leaf on a plate
Place 3 tbl mixture on the thick end of the leaf
Fold the sides in and roll toward the top of the leaf
Use the previously boiled water in a steamer
Place the cabbage rolls on a steamer rack
Steam for 2 hours
The rolls will shrink and tighten around the mixture
You can serve these old or cold, with or without sauces and kids love making them almost as much as they love eating them.
They also freeze well!
