Very Vegan Veggie Stew
This tasty stew will naturally help alkalize the body. It's perfect for any season and the raw jicama adds a delicious texture.
- 3 cups vegetable broth
- 1 cup cabbage
- 1 cup baby carrots
- 1 cup sugar snap peas
- 1 cup celery
- 2 tbl fresh rosemary, chopped
- 1 tsp fresh ginger, grated
- Dash of lemon pepper
- Zest from 1/2 a lemon
- 1 cup jicama, diced
- 1 cup low fat tofu, diced
- 1 tomato, diced
Add all ingredients except the jicama, tofu and tomatoes in a large soup pot
Bring to a boil.
Reduce heat and simmer until carrots are cooked to your desired tenderness
Remove from heat
Add the remaining ingredients
Serve warm, not hot.
