Shirley's Birthday Cake
Without a doubt this wonderful low carb, no sugar cake will serve any need you have whether it is for a birthday, anniversary, or just getting together with 12 good (but unsuspecting) friends. They’ll never know how healthy this scrumptious cake is! And it isn’t difficult to make.
- For the Cake:
- 2 tsp. unsalted butter
- 2 cups sliced almonds
- 2 tsp. baking powder
- 1/2 t salt
- 12 large eggs
- 1 cup Splenda
- 2 tsp. vanilla
- 2 tsp. almond extract
- For the Filling:
- 2 pints vanilla soy milk ice cream
- 3 pints fresh strawberries, quartered
- 2 T Splenda
- 2 cups whipped cream sweetened with 1/4 cup Splenda
- 1/4 cup Framboise Raspberry Liquor
1) Grease two 15-by-10-by 1-inch pans with butter. Line both pans with parchment paper and grease with butter again. Preheat oven to 350° F
2) Place almonds in bowl of food processor and pulverize until floury looking. Add baking powder and salt.
3) Separate the eggs. In a large bowl beat yolks and Splenda with an electric mixer until thick and lemony colored. Add the vanilla.
4) Fold almonds into the almond mixture and set aside.
5) With clean bowl and beaters, beat egg whites in a large bowl, until they form stiff peaks. Add a large spoonful of whites to yolk mixture and fold into mixture. Add 1/2 of the remaining whites to yolks, fold in and then add remaining whites.
6) Spread batter evenly between both pans and bake for 20-25 minutes until top springs back when touched. Let cakes cool
7) Meanwhile sprinkle Splenda over strawberries and allow to marinate.
8) When cake is cool, place the bottom of a 9" spring form pan onto cake and cut two circles from each cake.
9) Put spring form pan together and place one circle of cake in pan. Put 2/3 pint of ice cream onto cake and then place 1/3 of the strawberries onto ice cream. Splash a small amount of Framboise over berries. Place another circle of cake into pan. Layer as with first layer and repeat this process two more times, finish with cake layer. Wrap in plastic wrap and freeze until set.
10) When ready to serve, unmold and cover cake with whipped cream. Decorate with a few fresh strawberries.
