Meringue Drop Cookies
To help satisfy those cookie cravings!
- 6 Egg whites
- 1/4 tsp. Salt
- 1/4 tsp. Cream of tarter
- 1/2 tsp. Vanilla extract
- 1/4 cup Splenda
- or
- 1/2 cup Carob chips, sugarless
- 1/2 cup Walnut pieces
Eggs should be a room temperature
Preheat oven to 300 degrees
Place egg whites in a medium bowl
Mix on high until; the whites become frothy
Slowly add in salt, cream of tarter and vanilla
Continue mixing on high
Slowly add in the Splenda or the stevia
Beat until stiff peaks can be formed by lift a spoonful of the meringue
Carefully fold in the carob chips and walnut pieces
Reduce oven temperature to 250 degrees
Drop by teaspoonful on a parchment lined cookie sheet
Bake at 250 degrees for 1 hour
Makes 2 dozen
