Stuffed Chicken Breast

Your taste buds will love this delicious Stuffed Chicken Breast and they are simple and quick for those of us that are time conscious.

  • 4 Boned, skinless chicken breasts
  • 1 cup Orange juice - fresh squeezed is best
  • 1 tsp. Finely chopped chives
  • 1 tsp. Rosemary
  • 1 tsp. Minced garlic
  • 1/2 cup Grated Provolone cheese
  • 1/4 cup Diced tomatoes
  • 1/4 cup Diced apples

Place rinsed chicken breasts in a large bowl. In a small bowl mix the orange juice, chives, rosemary and garlic. Pour over the chicken breasts and allow to marinade for two hours or longer. In a small bowl mix the Provolone, tomatoes and apples. Remove the chicken breasts from the marinate and pat dry. With a sharp knife split the chicken breast to form a pocket. Stuff the chicken breast with the cheese, tomato and apple mixture. Bake at 325 for 40 minutes.
