Herb Chicken in a Pot
This is a simple one pot meal that is a full of zesty flavors.
Simple and delicious
- 1 tbs. Olive oil
- 2 Chicken breasts, boneless, skinless and cubed
- 5 Shallots, cut into one inch pieces
- 1 cup Carrots, cut into one inch pieces or 1 cup baby carrots
- 1/4 cup Almonds, sliced
- 1/2 tsp. Nutmeg (grated - fresh is best)
- 1 tsp. Cinnamon
- 1/3 cup White wine vinegar
- 1 1/2 cup Chicken stock
- 1/2 tsp. Tarragon, finely chopped
- 1/2 tsp. Parsley, finely chopped
- 1/2 tsp. Thyme, finely chopped
- Zest of one Orange
- 1/2 tsp. Stevia powder
- 1 tbs. Splenda
- Garnish:
- 1/2 cup Red grapes, halved
- Feta Cheese
- 4 Cherry tomatoes
- 4 Baby spinach leafs
Heat the olive oil in a large soup pot
Add the cubed chicken, shallots, and carrots and brown them in the oil
Add the other ingredients except the grapes, cheese, tomatoes and spinach
Simmer for two hours, stirring occasionally
Ladle into bowls and garnish with the grapes, cheese, tomatoes, and spinach
This can also be cooked in a crock pot, but it may take a bit longer.
